Preheat the oven to 400F.
In a blender combine the eggs, Peetz S.M.A.R.T Blend, warm almond milk, and vanilla extra.
Process until just combined.
Melt butter in a large cast iron skillet over medium high heat.
Remove from heat. Pour German Pancake batter into the pan. Place in oven.
Bake for approximately 15 minutes, until puffed and golden brown.
Serve with fruit and Canadian maple syrup.
