Tips for Baking with S.M.A.R.T. Blend

Why S.M.A.R.T.

Hello, my name is Peter, the founder of Peetz and the Ottawa-based holistic nutritionist behind S.M.A.R.T. Blend. I want to share my personal journey and the inspiration behind creating S.M.A.R.T. Blend, a journey rooted in my mission to help others suffering from leaky gut and related health issues, just like my daughter and I.

My Story

Growing up, I struggled with a poor body image. Despite trying every diet imaginable, I found myself yo-yoing between 250 and 285 pounds. To maintain a healthy weight, I was constantly dieting and rigorously working out.

In 2008, driven by vanity and pride, I decided to lose over 90 pounds before my wedding, achieving a fit 190 pounds. I was on top of the world, exercising daily and eating healthily, convinced I would never gain the weight back. However, I soon started regaining weight, sometimes 6 to 8 pounds over a weekend.

I sought help from dietitians who taught me about Canada’s food guide, calorie counting, and exercise monitoring, but none could explain why I kept gaining weight. Frustrated and seeing my dreams slip away, I confronted my doctor. His dismissive response, attributing my weight gain to overeating and lack of exercise, was a shocking disappointment and a pivotal moment for me.

This experience led me to return to school and become a holistic nutritionist. I learned the crucial difference between counting calories and nourishing the body, the importance of digestion, and the impacts of consuming foods I was intolerant to. It wasn’t just about being overweight; I was inflamed and swollen from head to toe due to my reactions to major allergens and sugar in our food.

The Birth of S.M.A.R.T. Blend

After completing my program, I decided to go gluten and dairy-free. I quickly realized that all the breads on the market shared similar ingredients, offering the nutrition profile of a biodegradable packing peanut and the taste of cardboard. This realization inspired me to create my own bread.

As a holistic nutritionist, I understood that most grains in North America had been scientifically altered—stripped, bleached, refined, processed, modified, genetically modified, or synthetically enriched. From my studies in Chinese and Ayurvedic medicine, I learned that we are healthiest when closest to nature. Mother Nature intended for us to digest and absorb her bounty, not scientific modifications.

This knowledge drove me to explore staple foods, superfoods, ancient whole grains and natural starches from other parts of the world—foods that had sustained populations in India, Africa, China, and the tropics for centuries. Thus, S.M.A.R.T. Blend was born.

Yes S.M.A.R.T. (Sorghum, Millet, Arrowroot, Brown Rice, Tapioca) is easy to use and a great substitute for any flour, it works best as a one to one in traditional recipes, mom’s old-fashioned favorites or simply “ the best of” from the internet. The only umdraw back with having so much more vitamins and minerals than wheat and all gluten-free flour, is that S.M.A.R.T. Blend tends to be a little heavy and requires more traditional intuitive baking methods. Like sifting the flour, whipping your egg whites separately into sift peaks, and folding them in slowly, are some old-fashioned baking tricks that adds air and lightness. Also, as a rule I always use 1.5 to 2 times the liveners called for in the recipe, like double acting baking powder, cream of tartar, baking soda and yeast, along with apple cider vinegar to create more CO2 bubbles makes the best use of S.M.A.R.T. Blend and makes for lighter cakes or pastries.

Although S.M.A.R.T. Blend is allergen-free, it is only 40% starch, which makes it lower in starch than most gluten-free flour blends currently sold.  Being 60% Superfoods & Ancient Whole Grains, It works best with traditional recipes. Not so much with the newer gluten-free or specialty recipes like dairy-free. These recipes are designed for the highly processed, high starch, white rice flours with no nutrition content.

The best way to use S.M.A.R.T. Blend is to use your old favorite recipes, bake with your senses and intuition, and confidently transform your favorite recipes into delicious more nutritious low starch gluten-free, easily replace dairy with coconut milk, or make your own butter milk using fresh lemon juice or apple cider along with coconut milk.

Our story begins with PEETZ S.M.A.R.T. Blend flour. Formulated by Peter de Hoog R.H.N., a registered holistic nutritionist. When he could not find a nutritious all-purpose baking flour that was, low starch and provided digestible nutrients. An allergen-free blend that has NO gluten/wheat-free, corn, soy, casein/dairy, potato, white rice, or modified starches. 

Sadly baking with competing flour, produced dry, cardboard-like, tasteless products that consist mostly of starches, with the ingredients and nutrition profile of a bio-degradable packing peanut at best. Starch, modified starches, and white rice are almost nutritionally void and offer very little in the way of vitamins, minerals, or fiber.

Our Story Background

In 2012, Peter opened Pete’s Gluten Free, a company that sold gluten-free baked goods to grocery retailers and restaurants throughout Ottawa. S.M.A.R.T. Blend was used to bake all of the cakes, cookies, muffins, pies, bread, and pizza crusts. After successfully selling more than 4.8 million in baked goods.  The business shut down in early 2020 and was unable to recover from the pandemic. 

Today, with new branding under PEETZ, this Canadian entrepreneur’s focus is closer to home and heart.

Peter and his daughter, Abby can be found happily baking in their family kitchen. Peter wants to share the joys and simplicity of baking, using his healthy flour alternative, with families in their kitchens across the country and making allergen-free baking fun. 

Today, Peetz S.M.A.R.T Blend enables families across Canada and the United States to transform their favorite recipes into delicious more nutritious treats.
